Here 's the first of what I hope to be the first of many recipes from the #1PMChat crowd.

Softened butter to grease
150g Plain flour
150g Whole Wheat flour
1 tsp Baking powder
½ tsp Baking soda
½ tsp Fine salt
170g Golden castor sugar (Can use normal sugar, but the golden castor sugar gives a better taste)
75ml Vegetable oil
2 Large eggs
1 tsp Vanilla extract
3 Large, or 4 medium, very ripe bananas
Preheat oven to 160C Fan/Gas 4
Butter and line 2 x 1 litre loaf tins. I use silicon loaf tins which I grease but do not line
Mix all dry ingredients together
Mix all wet ingredients except bananas together
Mash bananas well and combine with wet ingredients
Fold the dry ingredients into the wet mixture. Do not over mix
Divide equally between tins
Bake for 45 minutes. If you use a single 2 litre tin, bake for 1 hour
Let it cool for 10 minutes before turning onto a rack.
The loaves will freeze very well. Wrap in greaseproof paper first.
